Chef Alejandro Saravia is widely credited with introducing Peruvian cuisine to Australia’s food culture and currently runs his own critically acclaimed restaurant, Pastuso, in Melbourne, showcasing creative menus that celebrate the diversity of this fresh and vibrant cuisine.

From culinary school in Peru followed by a traineeship in New York to stints in Barcelona, Paris, London, and Sydney – including at the esteemed Sails on Lavender Bay – the coveted chef has worked with some of the best, including under Heston Blumenthal at The Fat Duck (London).

In 2017, Alejandro became the official food and beverage ambassador for Gippsland Victoria on the back of the successful Renascence Gippsland program that focuses on promoting the region and high quality grass-fed beef and their producers. Saravia is due to open Farmer’s Daughters early in 2020.

"Seasons are essential to farmers and chefs, so at Farmer’s Daughters, we work with them to get the best products to deliver the freshest locally sourced menus bringing the best of the countryside to the big smoke," says Saravia. 

As a result of several years of working directly with local farmers, he has been inspired by Gippsland to change the way we think about food. Using local, non-perfect ingredients and cook them in the simplest ways to really let the ingredients shine.
