Nick & Nora’s returns to the Australian Open in 2024, bringing with them the glamour and speakeasy flair of their Melbourne cocktail institution.

This year, acclaimed head bartender Kayla Reid created a sensational spritz-style cocktail exclusively for AO 2023 – which you can now try your hand at recreating via the recipe below.  

The tangy, fruity, refreshing summer spritz is a true delight, crafted for enjoyment under the sun.

The combination of Australian dry cassis delivers a luscious berry note, while the invigorating ginger and grapefruit shrub provide a fresh and spicy kick. With a splash of dry champagne, this concoction is elevated to new heights, offering a beautiful fizz that is sure to make your day even brighter.

Nick & Nora’s will return with their Bar Superbox at Rod Laver Arena, and we can’t wait to see what libations they serve up this summer!

Nick & Nora’s AO Spritz
  • 20mL Vodka
  • 15mL Marionette Dry Cassis
  • 30mL Grapefruit & Ginger Shrub (recipe below)
  • 30mL Dry Sparkling Wine or Champagne
  • 60mL Grapefruit Soda
  • Garnish: 2 x fresh mint sprig & pink grapefruit slice

Grapefruit & Ginger Shrub

  • 380ml Honey 
  • 150ml Water 
  • 35g fresh ginger (finely diced)
  • 45g grapefruit peels 
  • 400ml apple cider vinegar

Add all ingredients to an airtight container or vacuum-sealed bag. Allow to infuse at room temperature for 24 hours. Strain and bottle into a sterilised container. Keep refrigerated.
